Is there any sort of email client I can get for and install on my 1st Gen Ipod touch (with the original firmware)?

No there isn't, unless you jailbreak. iPod firmware 1 is completely dead in the iPod Touch world.
You should upgrade to firmware 2.2 contact these guys
